Pataniscas de fiambre, chouriço, queijo e azeitonas / Ham, chorizo, cheese and olives fried cakes

O meu dia começou mal! Levantei-me cedo, mas não sei como acabei por sair de casa às 9h e lá chegaram os miúdos atrasados à escola. Eu ainda estou em modo de Verão, e isto de casacos, chapéus de chuva, botas de Inverno, mais as mochilas, lanches e a minha mochila do ginásio nem sempre me corre da melhor forma. E é claro que acabei por me esquecer de alguma coisa em casa... a mochila do ginásio!
Enfim, amanhã corre melhor! :)
Mas apesar de tanta correria, de apanhar uma chuvada, ainda consegui fazer o almoço dos meus filhos a tempo. Fiz estas pataniscas de que os meus filhos adoraram. Normalmente faço de peixe, mas desta vez já não tinha tempo para cozer o peixe e fiz com o que tinha mais à mão. 



Ingredientes:
2 copos de farinha
2 ovos
150g de fiambre
50g de chouriço
50g de queijo
12 azeitonas verdes recheadas com pimento
leite
1 colher de chá de fermento em pó
1 molho de cebolinho
sal e pimenta a gosto
óleo

Começa-se por picar o fiambre, o chouriço e o queijo e cortam-se as azeitonas em rodelas. Numa tigela funda, coloca-se a farinha, o fermento em pó, as carnes frias, o queijo, as azeitonas, o cebolinho picado e os ovos. Envolve-se e junta-se o leite até a massa escorrer da colher sem ser preciso descolar. Temperar a massa, mas ter em conta que as carnes e as azeitonas já têm alto teor de sal.
Fritar pequenas colheradas de massa de cada vez e depois de fritas colocar em papel absorvente para retirar o óleo em excesso.
Antes de servir salpicar com sumo de limão. Servi com arroz e salada de alface.

My day started badly! I got up early, but somehow I ended up leaving home at 9am, so the kids arrived late to school. I'm still in summer mode, so coats, umbrellas,winter boots, plus backpacks, snacks and my gym bag does not always goes smoothly. And of course I ended up forgetting something at home … my gym bag!
Anyway, tomorrow will be better! :)
But despite the rush, getting soaking wet by the rain, still managed to make my kid's lunch in time. I made these fried cakes that my kids loved. I usually make it with fish, but this time had no time to boil the fish and made it with what I had in hand.


Ingredients:
2 cups flour
2 eggs
150g ham
50g chorizo
50g cheese
12 green olives stuffed with peper
milk
1 teaspoon baking powder
1 bunch of chives
salt and pepper to taste
oil

Begin by shredding the ham, the chorizo and the cheese and cut the olives into slices. In a deep bowl, place the flour, baking powder, the ham, chorizo, the cheese, the olives, chopped chives and eggs. Mix it together and add the milk until the dough drains from the spoon without having to take it off. Season the dough, but be aware that the chourizo and the olives already have high salt content.
Fry small spoonfuls of dough at a time and then put the fried cakes on paper towels to remove the excess oil.
Before serving sprinkle with lemon juice. Serve with rice and lettuce salad.
